The "Carol's World Famous Dunkin' Good Wacky Cake" Story

It was an ordinary day.  Sitting with my brother, Steve, at his Memorial Day pool party dunkin' a big piece of Carol's famous Wacky Cake.  Steve and I grew up dunkin' all sorts of things.  Cookies and cakes were our favorite items to dunk, always in milk.  There is a real skill to dunkin' you know.  You can't dunk every type of cookie or every style of cake.  Only those that can absorb milk and don't leak it all over the table or counter on the way to your mouth.  Well, today, Steve grabbed two large glasses, cut two big pieces of Wacky Cake, stuffed one in each glass and poured milk over each one.  A minute or two later we were both enjoying our Wacky Cake the way it should be enjoyed.  But, for those of you who have no idea what Wacky Cake may be,  I took a few photos of Carol making the treat before we headed to the party at my brother's house in nearby Ephrata, Pennsylvnia.  Follow along and you too can make the fabulous dessert that is great for eating by itself, with ice cream or dunkin' in a glass of milk.


"The Wacky Cake"
Using a mixing bowl, combine 3 cups flour ...
2 cups sugar ...
6 large T. Cocoa, 1 tsp. salt, 2 tsp. baking soda and blend together.
Make 3 holes in the blended mixture … pour 2 tsp. vanilla into one hole, 2 tsp. vinegar into another and ...
1 stick of melted butter into the other hole.
Add 2 cups water ... 
blend batter until ...
smooth.
Grease and flour a 9"x13" pan
Pour batter into pan
Place in 350 degree pre-heated oven for 30 minutes.
Check with toothpick to make sure the cake is finished.

"The Wacky Cake Icing"
Add 6 T of melted butter and 2 T shortening, blend and ...
add tsp. vanilla, pinch of salt, 4 1/2 cups 10X sugar and milk until creamy consistency.
Place on cake and smooth to edges.

Pretty simple recipe and it is so moist and delicious you'll be asking the cook in your family to make many more.  It was another extraordinary day in the life of an ordinary guy.
